Top 10 Campfire Snacks #8

PEANUT BUTTER-CHOCOLATE-MARSHMALLOW STUFFED BANANAS


This is an easy one folks, and so naughty it's nice! You'll need:

-tin foil
-slightly under ripe bananas
-Reece's peanut butter cups OR Reece's Pieces
-mini marshmallows
-graham cracker crumbs

Cut your banana from end to end, essentially creating a banana "boat". Stuff with broken up peanut butter cup or pieces, a drizzle of chocolate sauce, then marshmallow, and dust with graham cracker crumbs. Wrap it up with foil (leave some room between marshmallows and foil) and place into hot coals until melted, about 5-8 minutes. Remove from fire and let cool a bit, open and eat with a spoon, unless you want to get messy with it! Other stuffing ideas to consider:

The Elvis Presley- peanut butter, cooked bacon bits and marshmallows
The Bananas Foster Banana- butter, brown sugar, cinnamon and rum (extract will do!)
The Canadiana Banana- maple syrup, chopped walnuts and marshmallows
The PB Janana- peanut butter, any jam (grape is great!) and marshmallows
The Banana Split Banana- fresh sliced strawberries, chocolate sauce and marshmallows
The Ants-on-a-Log Banana- peanut butter, raisins, and marshmallows
The Hawaiianana- pineapple cream cheese, coconut and marshmallows
The Apple Pie Banana- brown sugar, apple slices, caramel sauce, cinnamon and marshmallows
The Mumbai-nana- coconut, cashews, raisins, sprinkle of garam masala, and marshmallows
The Minty Fresh Banana- chocolate chips, creme de menthe liquor and marshmallows

Maple Chipotle Praline Bacon


Sweet, salty, nutty, a bit of spice and oh so bacony? ABSOLUTELY! You've gotta try this. Pig candy is so hot right now! And if you close your eyes while you're eating it, it's low in fat and calories....NOT!

This is amazing on its own, broken up into a salad, or between pieces of french toast, and topped with fresh strawberries and a sprinkle of cinnamon for the ultimate gourmet cottage breakfast.




You'll need:
  • THICK sliced bacon
  • chopped pecans
  • brown sugar
  • maple syrup
  • chipotle pepper powder

    Preheat oven (or Q) to 425 degrees. Put bacon in a cold pan and add a couple tablespoons of water. Cook over medium heat, until almost cooked. Remove from pan and put on paper towels. Brush with maple syrup. Sprinkle chopped pecans first, then a little bit of brown sugar and chipotle pepper. Place into an aluminum pan and return to oven or Q for about ten minutes or until brown sugar has carmelized. Chill completely in fridge and enjoy!

    Butterscotch Walnut Apple Crisp


    Northern Ontario in the fall is a warm blanket of vibrant colours that wrap you up in cozy autumn comfort. Throw in a crackling fire, a loon calling goodbye as he takes flight into the sunset, and some of this apple crisp, and you've got one hell of a moment. If you've never been here in the fall, I highly, highly recommend it. 


    You can do this on the Q as well. Set the temp to about 350 (medium),and use a disposable tin. Cover the crisp with foil and poke some steam holes in it. It's best to put it on the second rack, or if possible, keep one side of the Q off and put your crisp there.
    Also important to note- try switching it up with peaches and pecans, it's fantastic. To learn more about Ontario apples, click here.

    Preheat oven to 350. Make your fruit mixture with the following:
    • 4 cups peeled, cored and sliced northern spy apples
    • 1/4 cup milk
    • 1 tbsp. flour
    • 1/2 cup firmly packed brown sugar

    Combine all ingredients, making sure apples are coated evenly. Place in an ungreased 8x8(or 9x9) baking dish.



    Next, combine the following until nice and crumbly and sprinkle over apple mixture:
    • 2/3 cup all purpose flour
    • 1/4 cup sugar
    • 1/2 cup quick cooking oats
    • 1/2 cup walnuts, chopped
    • 1/4 tsp. nutmeg
    • 1 tsp. cinnamon
    • 1/2 tsp. salt
    • 1 box of cook and serve butterscotch pudding 
    • ½ cup melted butter 


    Bake for 40-50 minutes until bubbly and golden. Serve with real vanilla ice cream or maple whipped cream, sprinkle with cinnamon and garnish with fresh mint if you've got it. It's a warm hug on a cold day, enjoy....
